Welcome back for this week's Christmas Trunk newsletter. This week i am sharing recipes that i have received from internet friends. We hope you will enjoy them.

Stacked Cheese Enchiladas

Preheat oven to 350 degrees. In medium saucepan, combine tomato sauce and spices. Simmer, covered, for 15 min. Spread 1/4 cup sauce in bottom of a 9 inch baking pan; top with tortilla. Spread with 3 Tbsp. of sauce and sprinkle with 1/4 cup of cheese.Layer remaining tortillas, sauce and cheese, ending with cheese. Bake, uncovered, until hot, about 25 min. Remove to serving platter. Cut into wedges. Serve with remaining sauce.

Makes 4 to 6 servings

These are very easy to make and taste delicious.

Chicken Cacciatore

Skin chicken, if desired. Rinse and pat dry. in a large skilet cook chicken,onion, and garlic in hot oil a bout 15 minutes or till chicken is lightly browned, turning to brown evenly. Drain off fat. stir together mushrooms,tomato sauce,undrained tomatoes, wine, broth, basil, bay leath, 1/4 teaspoon pepper, 1/4 teaspoon salt. Pour over chicken in skilet. Bring to a boiling; reduce heat. Cover and simmer for 30 to 35 minutes or till chicken is no longer pink. Cook your spaghetti. then serve the spaghetti with the chicken over top of it.

Banana Bread

Mix bananas, sugar, and oil in a large mixing bowl. Add baking soda, salt and eggs and mix well. Slowly add flour and mix well. Add walnuts, mix well and spoon in to 2 loaf pans treated with cooking sprey. Bake at 350 degrees for one hour. Bread should come out crisp on top and very moist inside.

SNOW RECIPES

Snow Muffins From Northern Canada

Sift dry ingredients into a bowl. Make a well in the center of the dry ingredients. Add milk, melted butter and grated rind. Stir lightly with a fork. Add snow and raisins and mix lightly. Spoon batter into 12 greased tins. Bake at 350 degrees for 15-18 minutes in an oven.

Snow Cream (2 qt.)

Beat together the egg and sugar, add rich cream. Whip up well and flavor to taste with vanilla flavoring. Then with mixer, whip into this enough dry snow to make as thick as ice cream.

Santa and Grandpa

It's Christmas time, and attention goes
To the funny guy with his ho, ho, ho's.
Yes, we all know the reindeer story
And hear the tales of Santa's glory.
But this will pass, and soon over town
The decorations will be coming down.
They'll be put away until next year
When it's time again for Christmas Cheer.
So I am sticking with another old guy
And I'm writing this to tell you why.
Old Santa's great one day, it's true,
But Grandpa's here the whole year through.
He sits by me when I'm feeling bad,
He's the best old friend I've ever had.
He will tell me a story, yes, and then,
He can quickly make me smile again.
We fish and Grandpa baits my hook,
If I ask him he will read my book.
He holds my hand when we take a walk
And he really listens when I talk.
So I truly love this dear old man,
Who sees me every time he can.
He goes with me and he cheers, too,
When Old Santa Claus is passing through.
